I'll work on making a better presentation next time, but behold! a Coconut Cake with 7 Minute Frosting!!!! ME. I did it. ME!!!!!! The recipe had me buy actual coconuts, drain them, bake 'em, crack 'em open (difficult, didn't help that 2 of them were mushy), peel, and shred them (also difficult). So much coconutty goodness went into it. Alton Brown is a genius and my new hero.
Talk about slice of heaven! Even without proper presentation it looks amazing!
